
Philosophy
The Rebholz style is an ongoing experiment. On the one hand, the Rebholz´s are largely resistant to trend and fads.
On the other, in the pursuit of our own wine ideal, the idea of “natural wine”, we leave no stone unturned. That obliges us to keep up a constant dialogue with our wines. Because this temperamental product of nature, with its tendency to vary, can´t be made by routine, but only with unremitting curiosity and a large dose of creativity.
Every year, we renew our winemaking mission. In doing so, we build on continuously updated expertise on the vilification process. We investigate, without prejudice, the potential benefits of different methods and new technologies. We believe that sharing the knowledge and experience of others, and putting new technologies to use doesn´t exclude the pursuit of our own, very individual goal. On the contrary, it includes it. And in this way we have gained the reputation of being both conservators and innovators.
The Rebholz type needs time. Impatience would be a crime, for winemaker and wine drinker alike, because wines with enormous potential need rest in order to mature. That is true of our full-bodied white wines, which are not quick off the mark, but exceptionally late developers.
Only after long repose in barrel and bottle do they reveal their subtle hidden facts and show their true greatness. It is even truer of the reds, our best Pinot Noir take up to five years to reach top form. During that period, the time they spend
in contact with young wood of old oaks is only a first, albeit important step. They need time in the bottle, too. And finally also in the glass, before we at last experience the transformation of rough musts into impressive wine personalities. If we take the time, paying attention as we taste and listen, they will tell us the amazing stories of their lives. And since, as a rule, our wines attain a venerable age while retaining all the freshness of youth, you can afford to let a little time go by before opening the last bottle.
