
History
The Rebholz style started as an idea. It matured in the mind of Eduard Rebholz (1889- 1966), a forestry expert who held the honorary title of Ökonomierat (agricultural counselor) and was to become something of a legend.
He took great exception to the contemporary taste in wine, and countered the unnatural, artificially sweetened blend of those days with his idea “of natural wine".
A trained scientist, he spent his whole life experimenting and carrying out tests to get to the bottom of the true nature of wines. Literally everything came under scrutiny: the climate had to be judged better, the soils researched and the ideal vines for them found, the right harvesting period redefined, and the then customary method of vinification had to be replaced by his own strict rules.
Last but not least, the results of research and the practical experience of winegrowers in other regions also had to be taken into account.
